Mellow Doux 6L with Brown Sugar and Yeast Nutrient


Let’s try a variation on the instant classic https://10pm.ca/brown-sugar-mellow-doux-6l/. Couple of differences this time:

  • We’ll be adding 1 1/2 tbsp yeast nutrient (recommends 1tbsp/gallon) – 1lb bag ordered from amazon.
  • 4 1/2 cups, whereas before it was only 3 1/2.
  • Open air ferment, i.e. “first” ferment, which is just a bucket with a towel over it for a couple days. The oxygen helps the yeast procreate.
  • We’ll also let the mix sit, mixing and sitting for a bit, and then measure its sugar content (supposedly more accurate but I’d like to test that).

Currently at HYDROMETER Before 1.088 Potential ABV 11.55%. White wine territory — that’s more like it. But we’ll take another measurement in a bit to see if that number changes. Some sources say to wait 12 hours so you can get a really accurate reading but ain’t nobody got time for that.

Two hours later and the sugar reading is the same. Let’s just dump in 1.5 tsp of yeast nutrient and 3/4 tsp EC1118 yeast. And cover for a couple days…

Either the nutrient or the open air ferment worked because I woke up to a super foamy broth in the morning…

So yeasty. Dr
